NOSE:
The aroma is reminiscent of a walk through a pine forest, with prominent notes of Douglas fir and bay laurel. There are also hints of citrus peel, sage, and juniper, along with a subtle earthiness that adds depth and complexity.

TASTE:
On the palate, it's bold and herbaceous, with the piney character of Douglas fir taking center stage. The California bay laurel adds a spicy, herbal note, while the coastal sage contributes a soft, earthy complexity. Juniper is present but more subdued than in traditional gins, allowing the local botanicals to shine. There’s also a touch of citrus and pepper that adds brightness to the rich, forest-like flavors.

FINISH:
The finish is long and clean, with lingering herbal notes, a hint of spice, and a subtle resinous quality from the fir. It leaves a refreshing and slightly savory aftertaste.
