Description
The grapes were harvested 100% manually in 400 kg capacity bins. A gentle destemming was carried out, without breaking the grain. From there, the grains went directly into 450 kg hoppers. to be transported to oak vats of 7000 l capacity, without the use of pumps;
where a cold maceration of 5-6 days was practiced at 8-10 ºC.
Fermentation was controlled between 26-28ºC for 10 days. The hat was manually remounted and trodden on a daily basis, very smooth, until the end of fermentation. After this stage, the wine was uncovered and immediately transferred to oak barrels, where malolactic fermentation was carried out. The wine was aged in oak barrels for 10 months.
