Description

A Blanc de Noirs cuvée, L’Audace is composed of 100% Pinot noir from 70-year-old vines of the lieu-dit (single-parcel) Sainte Marie. Named after its audacious and daring inception, L’Audace was one of the first cuvées to be made sans soufre (unsulfured) in Champagne, under the innovative craftsmanship of Aurélien Gerbais after his arrival at the Domaine in 2011. Beginning with this revolutionary cuvée, half of the House’s wines are also now produced without added sulphites.

Sans soufre winemaking allows for the greatest purity in terroir expression and relies on the healthiest grapes and the most precise winemaking to be successful. Zero dosage promotes further expression of the pure and profound aromas in L’Audace, and production is limited to 5000 bottles per year.

Tasting Notes

An immediate bouquet of oyster shell and sea foam flows steadily into aromatics of red apple, apricot, white flowers, dried mango and hot brioche. On the palate, L’Audace is structured, vinous and spicy with essences of apple, red plum, lemon peel, cream and almond over a lasting finish teeming with chalky minerality and trickles of caramel and spice.

Food Pairing

Designed for food pairing and true to its name, L’Audace boldly complements buttermilk fried mushrooms, salted duck fat fries sprinkled with rosemary and thyme, and even a hearty Reuben sandwich bursting with well-spiced, juicy pastrami, crunchy sauerkraut, Swiss cheese and a tangy Russian dressing.
