AGING:
Thirteen-fourteen months in new and two- to three-year-old French oak barrels.
WINEMAKING:
The Pastorale Vineyard bottlings are selected from 4-6 blocks planted to a mix of Calera and clone 777. All clusters are hand-sorted in order to separate the best for whole cluster fermentation. The wines are typically 30% whole cluster fermented, lending spice, texture and structure. Additionally, 20-25% of the grapes are fermented in oak open-top fermenters adding a rounder mouth feel to the finished blend.
