Description
Tillage, partial weeding, grassing of treatment rows, sustainable control, leaf stripping, manual harvest, sorting in the vineyard before harvest. Severe sorting in the winery, vatting whole berries destemmed by gravity, enzymage, yeasting, cold pre-fermentation maceration for one week. Daily pigeage, final hot maceration. Three weeks vatting. Manual devatting by gravity in the pneumatic stainless steel press.
