Description

Tillage, partial weeding, reasoned control, leaf stripping, manual harvest, sorting in the vineyard before harvest (verjuice, damaged grapes). Severe sorting in the winery, vatting whole berries destemmed by gravity. Enzymage, yeasting, cold pre-fermentation maceration for one week, daily punching down, final hot maceration. Three-week vatting, manual devatting using gravity trays in the stainless steel pneumatic press.

Tasting Notes

Ruby-purple color with mauve gleams, aroma of blackberries, redcurrant, cherry stone. A feline and wild evolution is not uncommon over time. Orientation towards leather, chocolate, pepper. A wine to be allowed to age a little so that it opens fully. Wine for laying down.

Food Pairing

Braised or roasted game animals and feathers, beef, lamb or poultry in stew. It also keeps company with typical cheeses: langres, époisses, Comté.
