Vine management includes tillage, partial weeding, grassing of treatment rows, reasoned control, stripping, manual harvesting, sorting in the vineyard before harvest (Verjus , damaged grapes). Strict sorting in the winery, vatting of the whole destemmed berries by gravity; Enzyming, yeasting, pre-fermentation cold maceration for one-week, daily punching down, final warm maceration. 3 weeks vatting. Manual devatting using tanks by gravity in the stainless-steel pneumatic press. The wine is aged 12 months in barrels, 1/3 of which new, malolactic fermentation in barrels, then blending in stainless steel vats for 3 months. Light filtration 5 microns before bottling to improve the brilliance of the wine and its aromatic purity.
