Description

Tillage, partial weeding, reasoned control, leaf stripping, manual harvest, sorting in the vineyard before harvest (verjuice, grapes damaged ...) Severe sorting in the winery, vatting whole berries destemmed by gravity. Enzymage, yeasting, cold pre-fermentation maceration for one week, daily punching down, final hot maceration.

Tasting Notes

Very sustained, deep color, black cherry color

NOSE:
complex nose, subtle on aromas of black fruits (blackcurrant, blackberry, blueberry…), truffles and liquorice.

TASTE:
Aromas of fur, musk, even wild. Frank attack on the palate, power, fat, very present but fine tannins, good length.
