Description

Managed since 2001 by the sister-brother duo Claude and François de Nicolay, it extends over nearly 14 hectares, entirely biodynamic since 2005. The vinifications are very traditional: whole grapes, fermentation temperatures not exceeding not 30°C, and no or very little new wood.

A trio of conditions that sums up the identity of the wines, whose color extraction is as limited as their expression is intensely floral and refined. The style of the wines has evolved a lot in a short time. The progress in a few years has been considerable here, both in red and white.
