Dewar’s “double-age” their whiskies by re-casking them for a marrying period after blending. In 2019, Dewar’s Master Blender, Stephanie Macleod, extended this to create her own 4-stage process known as Double Double ageing. This example including a finishing period in Palo Cortado sherry casks.

| TASTING NOTES | COLOR: Clear, mid-golden amber. NOSE: New leather, cigar box, slight matchbox lighting strip with cinnamon spice. Faint wisps of smoke and ripe peach skin. TASTE: Toffee, crème caramel, cigar box elegant oak, and zesty lemon, smoothed with rich honey, vanilla and caramel. Faint smoke and ripe Galia melon. FINISH: More delicate smoke emerges on the oaky, zesty lemon and spicy finish. OVERALL: Honey and zesty lemon with toffee, cigar box elegant oak, vanilla and caramel. Best appreciated neat rather than with water as this amplifies spice and supresses honey and caramel. |
