Clairin Sajous is an intriguing style of rhum agricole from Haiti - they press the sugar cane, and then reduce the juice over fires fuelled by the remains of the sugar cane! It's then fermented using wild yeasts and double distilled before being bottled at full-strength.
| TASTING NOTES | NOSE: Wet grass, iced buns, ripe mango and a hint of peppercorn. TASTE: Bitter herbs balanced by milk chocolate, with continued grassy notes. FINISH: Very slightly oak-y. Brown sugar and nutmeg. |
