Description

The slopes of Chateau Pavie and Ausone were first planted by the ancient Romans in the fourth century. However, Chateau Pavie did not become famous as a vineyard until almost two thousand years later.

Chateau Pavie was definitely famous by the mid 19th century. At the time, the Robert Parker of the day was the Bordeaux bible published by Cocks and Feret’s “Bordeaux et ses vins.” In 1850, the first edition was already high on the wines from Pavie as they named it one of the First classed Growths in Saint Emilion.

Tasting Notes

Dark, ruby violet colour, lovely nose of fresh blackberries and cassis. ; on the palate there is beautiful explosion of flavours: a generous fresh black fruit character with just the right amount of juiciness interwoven with tannins and oak. All is well balanced and fresh, there is a mineral vein running through the wine and a fresh elegance in the finish. This is a gorgeous Pavie Macquin with lots of richness, creamy structure and power. Well done.

Chateau Pavie is best paired with all types of classic meat dishes, veal, pork, beef, lamb, duck, game, roast chicken, roasted, braised and grilled dishes. Chateau Pavie is also good when matched with Asian dishes, rich fish courses like tuna, mushrooms and pasta.
