Description

Château Haut-Bailly was one of the first to produce a second wine in 1967. Originated from the same plots and made with the same winemaking techniques as the first label, La Parde Haut-Bailly is subject to the same draconian selection controls. Over time, it has developed its own personality, displaying a pleasant silky texture on the palate and achieving a style of elegance and refinement. Although its softness and forward aroma mean it can be drunk sooner than Château Haut-Bailly, it also has good aging potential (5 to 8 years).

The fresh and vibrant fruit of the 2014 vintage is very present in this sweet and accessible La Parde. The softness of the Merlot blended with beautiful ripe Cabernets bring this wine an elegant structure.

Tasting Notes

The second wine of this estate, formerly La Parde de Haut-Bailly, is a good reflection of the top wine. Firm tannins are embellished by black fruits that give richness and density. While tannins are there, the wine is generously textured and set for great medium-term aging.

Chateau Haut Bailly is best served at 15.5 degrees Celsius, 60 degrees Fahrenheit. The cool, almost cellar temperature gives the wine more freshness and lift. The wine of Chateau Haut Bailly is best served with all types of classic meat dishes, veal, pork, beef, lamb, duck, game, roast chicken, roasted, braised, and grilled dishes.

Chateau Haut Bailly is a perfect match with Asian dishes, hearty fish courses like tuna, mushrooms and pasta as well as cheese.
