NOSE:
If you want to use the No Added Sulfites in addition to the already slightly sulfurized Aux Fourneaux wine in the glass, the non-sulphurized wine shows a disarming frankness. Here too, Pinot Noir feels warm and supple like a forest floor in summer, it also references plums, raspberries and wild strawberries, cinnamon cherries and wild berry yoghurt. But it presents itself with a stronger accentuation of juicy, ripe fruit, with excess yeast and dark floral notes.
TASTE:
On the palate, the 2019 Aux Fourneaux Sans Sulfites initially added a bit more restrained, but also silky elegant and welcoming. Then, the ripe fruit of the blueberry becomes evident, accompanied as on the nose by lactic notes. In this variant of the wine, too, the fresh acidity and the increasingly tense mouthfeel are not noticeable until the second sip. But firmness and bitterness, which need time to smooth out, are much less dominant here. The pinot seems open and juicy with present but silky tannin on the finish and also quite silky acidity. For a wine without cru status, the 2019s Aux Fourneaux Sans Sulfites added considerable, even exciting size and complexity.
Food Pairing
Pancakes with oxtail ragout, paprika and Espelette pepper. Savoy cabbage balls on a background of red cabbage. Grouse breast with quinces on chocolate-cranberry sauce.
