Ampelidae - Le S | French White Wine

The grapes are grown organically without the use of pesticides and herbicides, in accordance with European organic farming specifications set out by ECOCERT.

The grapes are harvested some by hand some by machine, at break of dawn and promptly transported to the winery where they are sorted and de-stemmed. The grapes are then crushed and allowed to macerate for 14 hours before being gently pressed as would be Champagne with the free run off of juice being separated. Prior to fermentation which takes place over two to three weeks, the juice is allowed to settle. Fermentation occurs in barrels (30%) and tanks (70%) in a temperature-controlled environment before the wine is left to age on lees in French oak barrels for ten months.
